Mothers Day Gift |Tin of Iced Biscuits

Receiving a home made gift is always meaningful and when you can create something as a duo,then surely the love is doubled too!! We don’t often bake biscuits having had varied success with gluten free recipes, but we felt up to the challenge and to playing with icing!

Ingredients

•100g Margarine
•150g Caster Sugar
•2 Free Range Eggs
•460g Gluten Free Flour{we use Doves}
•1Tsp Gluten Free Baking Powder
•1Tsp Xanthan Gum
•Splash of vanilla {or other flavour}

Method

  • Cream together Sugar and Margarine.
  • Add Eggs one at a time with splash of Flavouring. Mix well each time.
  • Mix Baking Powder, Xanthan Gum and Flour together and add to creamed mixture.
  •  Work into a dough.
  • Roll out on a floured surface and cut out chosen shapes.
  • Bake 180°c for approx 15mins.
  • Cool completely before decorating.

Decorating

We used a combination of ready to use fondant icing, water icing and buttercream icing, plus mini marshmallows, sprinkles and freeze dried raspberry pieces to add a dash of pizazz! We coloured our icing pink using a gel colouring.
We had great fun decorating these biscuits! There was icing sugar, sprinkles, various used bowls and utensils on every available surface – it was wonderful chaos!
